Hanoi and Beyond: The Cuisine of Northern Vietnam
The cuisine of Northern Vietnam in Hanoi and its surroundings: Delicious dishes and authentic traditions!
When I think back to my childhood, the most vivid memories are the enticing smells wafting from the small street stalls and bustling markets. The cuisine of Northern Vietnam is more than just food – it’s an integral part of our culture, history, and daily life. Today, I invite you on a culinary journey through my hometown, exploring the unique flavors that make Northern Vietnamese cuisine renowned.
1. Overview of Hanoi and Northern Cuisine
- General Characteristics of Vietnamese Cuisine
Vietnamese cuisine is famous for its fresh ingredients and subtle balance of flavors. Aromatic herbs like coriander and Vietnamese mint add a fresh touch to every dish. Staples include rice, vegetables, and seafood, often cooked using gentle techniques like steaming and boiling to preserve their nutrients and delicate flavors. The taste of Northern cuisine is moderate and balanced, avoiding excess fat and sugar. Fish sauce and shrimp paste are mainly used to enhance flavors. Hanoi, the culinary hub of the North, is famous for iconic dishes like pho, bun thang, cha ca vermicelli, Vong village rice nuggets, Thanh Tri rice rolls, and special spices like Ca cuong essential oil and Lang basil.

- Distinctive Features of Northern Cuisine
Northern Vietnamese cuisine also shows Chinese influences, evident in the use of noodles, dumplings, and soy sauce. The flavors are lighter and less spicy than those of the South, reflecting a cooler climate and distinct culinary traditions. Specific aromatic herbs like Vietnamese mint and long coriander add subtle and complex nuances to the dishes.

  2. Hanoi, the Culinary Capital of the North
No culinary journey in the North is complete without a stop in Hanoi. The capital is full of iconic specialties that are renowned worldwide.
Pho
Pho is perhaps Hanoi’s most iconic dish. This clear and fragrant broth, usually served with beef (pho bo) or chicken (pho ga), is the result of a long culinary tradition. Pho originated in the early 20th century, and each bowl tells a story of patience and skill. For authentic pho in Hanoi, here are my favorite spots:
- Pho bo Lam: 48 Hang Vai Street (5:30 AM - 9:30 AM)
- Pho bo 8 Hang Da: 8 Hang Da Street (6 AM - 11 AM and 4:30 PM - 10 PM)
- Pho ga Hong: 9 Ly Thai To Street (all day)

  Bun Cha
Bun cha is another must-try dish in Hanoi. These grilled pork meatballs served with rice vermicelli and fresh herbs are a true delight. Enjoy them like a local by dipping the meatballs in nuoc mam sauce.
- Bun cha que tre: 33 Hang Giay Street (10 AM - 9 PM)
- Bun cha Hang Quat: 74 Hang Quat Street (10 AM - 2 PM)

  Cha Ca La Vong
Cha ca La Vong is an iconic fish dish, usually made with catfish marinated in turmeric and herbs, then grilled and served with rice vermicelli, peanuts, and fresh herbs. This dish, originating from Hanoi, is a must-try.
- Cha ca Thang Long: 6B Duong Thanh Street, Cua Dong, Hoan Kiem
- Cha ca Anh Vu: Giang Vo Street, Cho Dua, Dong Da

  Bun Bo Nam Bo
Bun bo Nam Bo, a beef noodle soup, is a Hanoi dish, not from Southern Vietnam. It originates from a street formerly named Nam Bo (now Le Duan Street). This dish consists of marinated and sautéed beef, served on a bed of rice vermicelli, with fresh herbs, bean sprouts, roasted peanuts, and a sweet nuoc mam sauce.
- Bun bo Nam Bo Bach Phuong: 73 Hang Dieu, Hoan Kiem
| Tip: Don't miss visiting Dong Xuan alley to taste all the delights of Hanoi street food. Even if you don't eat, this alley is worth a visit for its lively atmosphere and numerous stalls. |
3. Culinary Journey in the Northern Provinces
- Ha Giang
Ha Giang, with its breathtaking mountainous landscapes, offers a unique cuisine influenced by local ethnic traditions. Thang co, a horse meat soup, is a traditional dish not to be missed. Men men, a ground corn dish, and thang den, glutinous rice balls, are also local specialties to discover in ethnic markets. It might sound strange, but it's very good!

- Ninh Binh
Ninh Binh, famous for its karst landscapes, offers culinary delights such as com chay (crispy rice) and de nui (mountain goat). The riverside restaurants offer stunning views while you savor these delicious dishes. Don't miss nem chua, a fermented pork sausage.

  - Sapa
Sapa, known for its terraced rice fields and ethnic minorities, offers unique dishes like lon cap nach (grilled suckling pig), ca hoi (salmon), and rau cai meo (wild vegetables). Sapa's colorful markets are perfect for discovering local products and traditional crafts.
4. Local Tips for an Authentic Culinary Experience
Dare to be Adventurous: Step out of your comfort zone and be surprised by new flavors. Ask your guide or local residents for recommendations to discover lesser-known specialties.
Explore Local Markets: This is where you will find the freshest ingredients and the most authentic dishes. Markets are the beating heart of Vietnamese culinary culture.
Favor Small Neighborhood Restaurants: Street stalls and family-run establishments are often the best places for affordable and authentic Vietnamese cuisine.
| Note: In local markets and small restaurants, cash (in Vietnamese dong - VND) is often the only accepted payment method. Check out this article to better understand Vietnamese currency: Vietnamese Currency, Tipping & Bargaining: A Complete Guide |
Learn a Few Words of Vietnamese: Greet vendors, order your dish, and thank them in Vietnamese for a warm reception. A simple "xin chao" (hello) or "cam on" (thank you) can make all the difference.
Trust Your Guide: An experienced local guide is your best ally to immerse yourself in Northern Vietnamese culinary culture. They will show you secret addresses and explain local customs.
